A Must-Make Recipe for All Chicken Parmesan Lovers

Chicken Parmesan is a dish often made in my house. The combination of chicken, pasta, and cheese is always a comforting way to end a long day. Sometimes though, we need a little break from the norm and that’s where this recipe comes in to play. My family’s twist on classic Chicken Parmesan is this Italian Chicken Parmesan Panini.
Any recipe that uses parmesan is an instant hit in my house. Did you know that not all parmesan is Parmesan though? The word Parmesan literally means “from Parma,” so only Parmesan cheese from Parma is true Parmesan. My favorite, Parmigiano Reggiano, is made in the areas in and around the province of Parma. Making this panini was a bit hard because my husband loves Parmigiano Reggiano so much, he was eating it nearly as quickly as I could shave it off the wedge! A few times, I even caught him cutting huge pieces off the wedge and sharing with my daughter!

- 2 slices Itlian Bread
- 2 tbsp Basil Pesto
- 1 cup sliced mushrooms
- 1 cup mozzarella cheese
- 1 cup diced cooked chicken
- 1 tsp italian seasoning
- 1 wedge Parmigiano Reggiano Parmigiano Reggiano cheese will need to be grated and shaved according to your preferences.
- 6 slices pepperoni
- 1 tsp garlic powder
- 2 tbsp butter
- 1/2 cup marinara sauce
- Butter one side of each slice of bread.
- Generously dab grated Parmigiano Reggiano onto buttered bread. This will give the panini an extra savory flavor in each bite.
- Spread basil pesto on other side of each slice of bread.
- Place one slice of bread onto panini press, buttered side down. If you don't have a panini press, a griddle or skillet will work as well.
- Add mozzarella, pepperoni slices, mushrooms, Italian seasoning, chicken, and additional Parmigiano Reggiano and top with other slice of bread, buttered side out.
- Close panini press and let sit for 2 minutes. If using a skillet or griddle, you'll need to adjust your time accordingly.
- Remove panini from press and sprinkle Parmigiano Reggiano on top for a little extra flavor.
- Dip sandwich in marinara as desired for maximum flavor.
